Rotisserie Chicken Quesadillas

- 8 cups of rotisserie chicken, shredded (mix up the white and dark meat)
- 1 packet of taco seasoning or make your own
- 4 oz. cream cheese, softened
- ½ cup salsa
- 8 burrito sized tortillas
- 2 cups shredded sharp cheddar cheese
- Preheat oven to 375 degrees.
- Line two baking sheets with parchment paper.
- In a large bowl, mix chicken, taco seasoning, cream cheese, and salsa.
- Layer half of your tortilla with the chicken mixture and top with ¼ cup cheddar cheese. Fold in half.
- Repeat to make 8 quesadillas.
- Bake for 8-10 minutes until the tortillas start to brown on the edges and are crispy.
