Italian Tortilla Roll-Up Recipe

Things get busy around our house as the new homeschool year begins. Being a work-at-home-homeschooling-mom comes with a unique set of challenges, creating delicious and healthy meals being one of them.  Thankfully, Ben is pretty independent in the kitchen for breakfast and lunch as long as I have stocked the fridge and cupboards with easy-to-use ingredients.

Ben is a master with the tortilla. I would guess that he makes something with tortillas 3-4 days a week. Some of his favorite creations include quesadillas with cheese and chicken or beans (topped with salsa and sour cream), tortilla pizza, roll-ups with Nutella/sliced banana/sliced strawberries, and lunch meat roll-ups that usually begin with a base of cream cheese and spicy mustard. He likes to make these roll-ups with just about any lunch meat you can imagine, but one of his very favorite concoctions is his own recipe, based on a traditional Italian sub sandwich.  I’m going to share that one with you today, because it is my personal favorite. It is really delicious and a great option for your kids that are a little more sophisticated than peanut butter and jelly or grilled cheese. You know . . . your middle schoolers.  

 Italian Tortilla Roll-Up Recipe

This Italian Tortilla Roll-up Recipe is easy enough for kids to make and delicious, too!

This recipe is simple enough for most kids 10 and older to make.

Ingredients
  1. 2 Azteca No Preservative Flour Tortillas (super taco size)
  2. 2 cups baby spinach
  3. 1/2 cup roasted red peppers, sliced
  4. 1/4 cup banana pepper rings
  5. 4 T. Italian dressing
  6. 2 slices Provolone cheese
  7. 2 ounces sliced salami
  8. 2 ounces sliced pepperoni
Instructions
  1. In a medium bowl, toss the baby spinach and peppers with the Italian dressing.
  2. Warm the tortillas in the microwave between damp paper towels for 15-20 seconds to make rolling easier.
  3. Top each tortilla with 1/2 of the salami, pepperoni, cheese, and spinach mixture
  4. Roll up, similar to the way you would a burrito
  5. Slice in half and serve.

The wonderful thing about tortillas is that they make it super simple for kids to make their own snacks and lunches. Ben even makes lunch for me! As a busy mom, that is golden.
