Juice Pulp Bread Recipe

Anyone else feel guilty throwing away all of that pulp after your juice? Consider turning your juice pulp in to yummy breads or muffins, for example. Here’s a recipe for you:

Juice Pulp Bread Recipe

Ingredients:

3/4 coconut palm sugar
2 T honey
1/4 cup coconut or almond milk
3 eggs
3/4 cup applesauce
2 mashed ripe bananas
1 tsp vanilla extract
1 tsp ground cinnamon
1/2 tsp ground cloves
2 1/4 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cups pulp from juicing (you can use any fruits and veggies, but my personal favorites are zucchini, spinach, apples, pears, and carrots)

Directions:

Preheat oven to 350. Grease a loaf pan

In a medium bowl (or your new Kitchen Aid Mixer bowl), whisk together the sugar, milk, egg,  banana, applesauce), honey, vanilla, cinnamon, and cloves.

In a large bowl, stir together the flour, baking powder, baking soda, and salt. Slowly add dry ingredients to the wet mixture. Lastly, add your juicing pulp. Mix on low speed until combined. Do not over mix.

Pour the batter into the greased loaf pan and bake for 45 minutes or until a knife inserted into the center comes out clean. Cool in the pan for 10 minutes. Remove the bread from the pan and place on a wire rack to finish cooling.
