When is purple really green? When you had wild blueberries to the mix!

I love smoothies. They are healthy, filling, and delicious. In this post, I am attempting to inspire myself to get back to making a smoothie every morning for breakfast. One of these will seriously keep me going all morning!

Yummy Purple Smoothie Recipe

It really is a green smoothie. There’s as much spinach in this one as is in my favorite green smoothie!

If you’re worried about putting spinach in your smoothie . . . don’t. You really cannot taste it at all. And it adds so much nutrition without adding calories!  And then the addition of the blueberries — wow! Talk about a nutritional boost!

The banana (if it’s super ripe) and pineapple will add a lot of sweetness to the smoothie so that you will not need to add any additional sugar or sweeteners. I love that. Especially since I generally share this smoothie with Ben.

Blueberry-Banana Purple Smoothie Recipe

2 generous handfuls baby spinach
1 ripened banana (the riper the better)
1 cup frozen wild blueberries
1 cup frozen pineapple chunks
1.5 cups water (or coconut milk, if desired)

Blend until smooth. I use a Ninja blender, but I have friends who use a regular blender with no issues.

Yields 2-16oz servings, the perfect amount for both Ben and me to have one for breakfast or a snack.

Optional ingredient: Protein powder of your choice. I often add 1 serving of fermented vegan protein powder to the above. Adding the protein powder truly makes my smoothies a meal replacement.

Enjoy!
