I dream of a day when I can get motivated enough to do some bulk cooking (freezer cooking), so that I have a month’s worth of meals in the freezer. So, until that day, I do what I can by doubling recipes. If you do this 3 nights a week for a month, you’ll have a couple of weeks worth of meals collected in a fairly short period of time. Perfect for when you’re short on time or need to take a meal to someone in need.
Some other foods I often double for freezing include — ground beef for tacos, shredded chicken for soups, quesadillas or burritos, pasta sauce, and manicotti.
