The Juice Fast (Day 4) Beet Juice Recipe

Three days down, 37 to go! Yes, that means right now I am saying out loud, to you, that I will do this fast for 40 days. I believe I can do this with the strength that only comes from Christ.

Day 3 brought some ummmm . . . interesting changes. First of all, I dreamt at least 3 times last night that I “accidentally” put food in my mouth. Dreams can be so weird. And, let’s just say I won’t need to purchase that Smooth Move Herbal Tea I have in my cart on Amazon right away and leave it at that.

Moving on . . . (no pun intended)

I am still mostly satiated with 1.5 quarts of juice daily — 1 quart of green and 1/2 quart of carrot-based. I did up my water intake yesterday to 2 full quarts to flush toxins more. I add lemon and (sometimes) cucumber to my water. It’s quite tasty and refreshing that way, and I don’t mind drinking it at all. Lemon is also alkalizing to the body — I’m told this is very important. I still have so much to learn! I did have some hunger pangs at around bedtime, but some extra water helped with that and I slept well — for 8 hours!

Someone asked if I’m drinking tap water or bottled water. I am drinking bottled — Smart Water, to be exact. I pick it up at Costco in a 12-pack of 1 liter bottles for about $13. If you see it cheaper somewhere, please let me know! I know, I know — bottled water is not the best thing to be drinking. But I think Smart Water is the best choice of bottled waters, and I don’t reuse the bottles. I just recycle them.

I tried another new juice combination yesterday, and it was really tasty. I’ve been wanting to try juicing beets, but someone told me they taste like dirt. I was imagining juicing them to be akin to drinking mud. Boy, was I surprised! Juiced with apple, carrot, and ginger, beet juice is delicious and it makes the juice a gorgeous reddish/pinkish/purplish magenta color. That’s important for those of us who like visually appealing juices, right? <smile>

Before I found the nerve to juice the beet, I went online and did some research on the health benefits of this root vegetable. Here’s what I found*:

  • Beet juice is a blood purifier and helps build red blood cells (this is great news for my anemia!).
  • Beet juice can cure diseases of the circulatory system and digestive system (look out IBS!).
  • Beet juice lowers blood pressure in those with hypertension.
  • Beet juice can help fight cancer (who doesn’t want to do that?)
  • Beet juice can increase your body’s production of glutathione. Glutathione is important because it binds with environmental chemicals and pulls them into the large intestine for elimination (that’s even more detoxification!). 
  • Beets can lower cholesterol and triglycerides. 

I see a lot more beet juice in my future!

Here’s the recipe I made yesterday, for those who would like to add this healthful juice to your diet, too. Isn’t it pretty?

6-8 carrots

1 gala apple, seeds removed

1 beet

thumb-sized piece of ginger

Juice, stir, and enjoy! This made about 20 ounces of  delicious juice. I drank every drop.

Here’s a tip for you — always remove apple seeds before juicing. They are poisonous!
